Indulge in the delightful Pentire Seaward Palomar, a recipe that combines coastal freshness with zesty citrus notes. Begin with 50ml of Pentire Seaward, a non-alcoholic spirit capturing the essence of Cornwall’s coastal landscape.

Add a burst of flavor with 25ml of homemade grapefruit syrup, infusing a sweet and tangy profile that complements the Seaward’s botanicals. Balance the sweetness with 25ml each of lime juice and fresh grapefruit juice, creating a harmonious blend of citrusy goodness.

Top it off with soda to your liking, adding a light effervescence that enhances the overall refreshing quality. Sprinkle a pinch of Cornish sea salt for a hint of coastal minerality that elevates the flavor profile. Garnish your Palomar with a wedge of grapefruit for a visually appealing and aromatic finish.

Ingredients:

  • 50ml Pentire Seaward
  • 25ml Grapefruit syrup*
  • 25ml Lime juice
  • 25ml Fresh grapefruit juice
  • Soda to taste
  • Pinch of Cornish sea salt
  • Wedge of grapefruit to garnish

*Equal parts caster sugar and fresh grapefruit juice (as a sugar alternative you can use honey or agave).

Method:

Fill a highball glass with ice cubes, measure in the Pentire, grapefruit syrup, grapefruit juice, lime juice and a pinch of salt and top up with soda. Stir and garnish with the wedge of grapefruit.

*Grapefruit Syrup Method

Ingredients:

400g Caster sugar
200ml Fresh grapefruit juice, strained.

Combine two-parts caster sugar to one-part juiceas it is a little thicker and takes up less volume in the drink. Put the sugar and juice in a pan and set over a gentle heat. Be careful – the mixture shouldn’t simmer as this will introduce flavour into the syrup. You will notice that the sugar will dissolve and the syrup will clarify. Once it gets to this point, take it off the heat. Store in the fridge for up to 2–3 weeks.
