A light as clouds twist on the New Orlean’s classic.

Experience a light-as-clouds variation of the classic New Orleans cocktail, enriched with the unique botanical essence of Pentire Adrift. This non-alcoholic spirit is a testament to the coastal heritage of Cornwall, UK, where a medley of indigenous plants is distilled to create a harmonious blend of coastal, herbaceous, and fresh notes.

The key botanicals, including Rock Samphire, Sage, Pentire Plant Blend, Lemon Citrus, and Cornish Sea Salt, contribute to a sensory journey that mirrors the natural richness of the coastal landscape. Pentire Adrift is not only a flavorful experience but also a plant-based, low-calorie alternative that is free from added sugar, artificial colorings, and artificial flavorings.

To elevate this cocktail, combine 50ml of Pentire Adrift with 25ml of fresh lemon juice, 20ml of sugar syrup (infused, perhaps, with fig leaf), and 50ml of Barrista Oatly. Add 1 egg white or a vegan alternative for a delightful frothiness. Top it off with tonic water to create a refreshing twist on tradition, capturing the essence of Cornwall’s coastal splendor in every sip.

Notes from The Mocktail Mix team: Aqua faba can be used as a substitute for egg whites in a some of Mocktails.

Ingredients:

  • 50ml Pentire Adrift
  • 25ml fresh lemon juice
  • 20ml sugar syrup (could be flavoured
  • perhaps with fig leaf)
  • 50ml Barrista Oatly
  • 1 egg white or vegan alternative
  • Tonic water to top
  • Mint leaf

Garnish

Mint leaf, Nigella flower

Method:

Shake all but the tonic hard for a couple of minutes in a shaker filled with ice, then strain the cocktail ad shake again this time without ice (this is known as dry shaking).

Strain the cocktail using a hawthorn strainer into your ceramic cup and wait for around 10 seconds for the foam to sit.

Then top with a little tonic, the foam should rise in one solid column as the bubbles raise the foam. Garnish with a mint leaf.
